100% Bourbon Coffee grown at a minimum of 4,600 ft. above sea level.

Hand picked when cherries reach a deep dark red color.

Strictly selected by hand to eliminate any green unripe cherries.

The fresh cherries are collected in a separate tanks at the mill for immediate pulping to get the fresh skin off.

Coffee beans are left in water tanks until a natural fermentation is reached.

The beans are washed with pure spring water and dried under direct sunlight over clay patios, then stored in wooden silos during 60 days until it reaches a uniform humidity.

Under strict quality control, only those beans above size 16 screen, will be transported by a moving band in wich 32 women will pick by hand the few deffective beans that were left.
